Subject: [PATCH] Move Node.js pins to the 26 line

Moves this repo's Node.js version pins to the current 26 line.

- .nvmrc / .node-version, CI and publish workflows, and Docker base images point at Node 26 where present.
- `engines` floors are unchanged, so supported consumers are not dropped.
