What changed

• One page for screens. "Waveshare screens" is gone; everything that was on it is now on Supported screens, shortened where it repeated the Hardware page. The page is: is your screen tested (and the report form), IT8951 screens, Waveshare's small screens (config, what to know, GPIO 18 and HiFiBerry, all models), virtual screen.
• The page is now plain Markdown (docs/screens.md), so it can be edited like any other page. Before, its text was inside Python code. The tables are still made from epdlib's lists of models while the site is built: they go where the page says <!-- made from epdlib: ... --> (manual.fill_screens, called from mkdocs_hooks.py). If one of those places is missing, the build stops with an error that names it.
• The old address keeps working: /waveshare-screens/ forwards to /screens/#waveshare. Pis that already run PaperPi have that address in their web interface.
• Links to the old page now point to the new one: Hardware, Troubleshooting, Running from source, and the web interface's Screen & system page.
• "Not working" is now one of the bullet points under "What to know" (still made from epdlib's list).

The table of screens known to work and not work that #348 asks for is not part of this PR.

Area

docs (docs/, mkdocs.yml, mkdocs_hooks.py), plus src/paperpi/manual.py (makes the tables) and one link in src/paperpi/web/templates/screen.html.

Tests

• test_the_screens_page_lists_every_model_epdlib_has now fills the real docs/screens.md and checks that no place is left unfilled; new test_a_missing_place_for_a_table_stops_the_build.
• uv run pytest passes (2396 passed)
• uv run ruff check . passes
• mkdocs build --strict passes; checked in a browser that the page looks right and that /waveshare-screens/ opens the new page at the Waveshare part.
